Garden Asheville

I am waging war on the invasives on my property.  Our property is mostly wooded, but there are several areas that had been cleared where invasives - mostly oriental bittersweet and multiflora rose - have established.  I've been handpulling and removing by root as much as possible, but it is very time-consuming (and has resulted in too much exposure to poison ivy, no matter what I wear!).  Any suggestions for other organic methods of removal?  And any thoughts on what to plant that may stand a chance against these as I continue to try to remove them?  My immediate focus is a hillside that borders our back yard, western slope, good sunlight, below the treeline.  I am thinking of wildflowers, or a more formal perennial garden featuring natives, but am open to ideas.

Neighbors of mine have used goats very successfully and i understand there's a property in Asheville that did also. I cut back my hills by hand every winter in my battle against honeysuckle, multiflora, wild grapevine etc. It doesn't make it go away but it keeps things from getting worse. I think to grow wildflowers or perennials you would need to get rid of the invasives first to have any chance. A cover crop - alfalfa? might offer some competition.
