Garden Asheville

These are two vegetables I've never had any success with. Do you need the soil to be extra-fine? Also, I've heard that you need to cure potatoes after harvest before you eat them. Is this true?

If you love carrots, use a raised bed system. 1/3 compost, 1/3 course vermiculite, and 1/3 peat moss. I followed this recipe from the square foot gardener. A revolutionary book for home gardening in my opinion.

The carrots were awesome and better yet, so easy to pull! We also did not have to rinse and rinse and rinse our greens since there was no clay to stick to the leaves. I'm going to plant some spinach next week in a few squares and see what happens!
